Simple Chicken, Fruit & Cheddar Salad

2 Servings

Ingredients:

  • ½ lbs chicken breast, sliced into small tenders; 1 tsp avocado oil, salt & pepper for seasoning 

  • 4 cups lettuce or mixed greens of choice 

  • ½ apple of honeycrisp apple, thinly sliced 

  • ½ pomegranate, seeded 

  • 4 oz cheddar cheese, crumbled into small pieces

  • ½ cup pepitas 

  • Balsamic vinegar & extra virgin olive oil for dressing

Instructions: 

  1. Season chicken with desired salt and pepper.  Heat skillet to medium heat, add oil and grill chicken until browned cooked through- about 5 minutes per side.  Remove from heat and let cool for 5 minutes and slice into bite size pieces.. 

  2. Place salad in a serving bowl.  Add apples, pomegranate seeds, cheddar cheese, pepitas, and chicken.  Dress generously with balsamic vinegar and extra virgin olive oil.  Crack pepper on top if desired.
