Mediterranean Baked Cod

3-4 servings 

Ingredients:

  • 3-4 pieces of wild cod (1 ½ lbs)

  • ½ tsp salt

  • ½ tsp pepper

  • 2 Tbsp. avocado oil 

  • 1 shallot, finely chopped

  • 4 cloves garlic, minced 

  • 2  tsp dried oregano 

  • 3 cups cherry tomatoes, halved 

  • ¼ cup fresh parsley, finely chopped 

  • ½ cup kalamata olives 

  • ⅓ cup crumbled feta cheese

  • 2 Tbsp capers 

Instructions: 

  1. Preheat the oven to 400 degrees F. 

  2. Season both sides of cod with salt and pepper.  

  3. Heat skillet over medium high heat, add ½ of avocado oil followed by fish pieces to pan.  Sear for 2-3 minutes per side.  Transfer cod to a plate. 

  4. In the same skillet add remaining olive oil and shallot, cooking 2-3 minutes until softened.  Add garlic and oregano, stirring constantly until fragrant.  Add tomatoes, parsley, olives, and capers and cook for 1-2 minutes, just  to heat. 

  5. Place cod pieces back into the skillet, nestled in tomato mixture, crumble feta on top, and place skillet into the oven, bake for 10 minutes or until fish flakes easily.  

  6. Remove from the oven and squeeze lemon juice on top.
