Loaded Sweet Potato Toast

3 Servings 

Ingredients

  • 2 sweet potatoes, thickly sliced

  • 2 Tbsp. avocado oil 

  • ½ purple cabbage, thinly sliced

  • 1 cup cilantro  

  • 2 avocadoes

  • 1 lime 

  • 1 cob of corn, kernels removed 

  • ¼ purple onion, diced 

  • 1 (15 oz.) can black beans, unsalted 

  • 1 tomato 

  • Salt & pepper 

Instructions: 

  1. Preheat the oven to 400 degrees F.

  2. Place potato slices on a baking sheet and cover with oil.  Place potatoes in the oven for 30-40 minutes, until soft at center and lightly crisped.  

  3. In a large bowl sprinkle salt liberally over cabbage and massage until it loses its stiff structure. 

  4. Put avocado, lime, and cilantro in and use an immersion blender to smooth and blend into smooth. 

  5. In a medium bowl mix together corn, onion, black beans, and tomato.  Salt and pepper to taste. 

  6. Stack corn mixture on top of roasted potatoes.  Add cabbage and top with avocado blend.
