Purple Cabbage Arugula Salad

Ingredients for Salad
½ head of small purple cabbage, thinly sliced
3 cups arugula leaves
1 granny smith apple, cut into matchsticks
½ cup pecans
Ingredients for Dressing
2 garlic cloves, minced
¼ cup red wine vinegar
⅓ cup extra virgin olive oil
½ tsp honey
½ tsp dijon mustard
Salt and pepper
Instructions:
Combine salad ingredients in a large bowl. In small bowl, whisk together dressing ingredients and pour over top of salad and toss. Serve with protein of choice.
