Purple Cabbage Arugula Salad

4 servings 

Ingredients for Salad

  • ½ head of small purple cabbage, thinly sliced  

  • 3 cups arugula leaves 

  • 1 granny smith apple, cut into matchsticks 

  • ½ cup pecans 

Ingredients for Dressing 

  • 2 garlic cloves, minced 

  • ¼ cup red wine vinegar

  • ⅓ cup extra virgin olive oil 

  • ½ tsp honey 

  • ½ tsp dijon mustard 

  • Salt and pepper 

Instructions: 

  1. Combine salad ingredients in a large bowl.  In small bowl, whisk together dressing ingredients and pour over top of salad and toss.  Serve with protein of choice.
