Chili

Ingredients

  • 1 Tbsp avocado oil 

  • 1 pound lean ground beef

  • 1 yellow onion, diced

  • 4 cloves garlic, minced 

  • 1 bell pepper, diced 

  • 2 tsp dried oregano 

  • 2 tsp chili powder

  • 2 tsp cumin 

  • 1 tsp paprika

  • 1 tsp salt & pepper, each 

  • 1 (15 oz can) no salt added black beans, water removed

  • 1 (15 oz can) no salt added kidney beans, water removed

  • 2 (15 oz can) no salt added sodium diced tomatoes 

  • 1 (7 oz can) diced hatch green chili 

  • ½ Tbsp cocoa powder 

  • Serve with toppings of your choice: shredded cheese, cilantro, jalapeno, avocado, tortilla chips, or greek yogurt

Instructions

  1. Heat a large skillet over medium heat.  Add avocado oil & ground beef and cook, stirring consistently  until lightly browned, 3-4 minutes.  

  2. Add onion, garlic, and bell pepper and cook until onions are translucent, 2-3 minutes.  Add spices and cook until fragrant, 1-2 minutes.  

  3. Add beans, tomatoes, chilis and bring to a light simmer.  

  4. Add cocoa powder and continue to simmer for another 5- 10 minutes 

  5. Serve with desired toppings
