Spicy Tofu Bowl

3 Servings 

Ingredients:

  • 1 block extra firm tofu, largely diced 

  • Salt 

  • Prepared rice, 3 servings 

  • 2 Tbsp kimchi juice or juice from picked onions

  • 1 Tbsp sesame oil 

  • 1 Tbsp maple syrup 

  • 2 Tbsp low sodium soy sauce

  • 1 Tbsp rice vinegar

  • 1 Tbsp sriracha 

  • 1 tsp corn scratch 

  • Avocado oil 

  • 1 cup edamame 

  • 1 cucumber, sliced 

  • 2 carrots, sliced 

  • 1 serrano pepper, sliced 

  • ½ cup picked purple onion 

  • ½ cup picked radish 

  • 1 lime 

  • Optional toppings:  mint, chive, sesame seeds

Instructions:

  1. Prepare rice according to package directions.

  2. In a medium bowl whisk together  kimchi juice, sesame oil, maple syrup, soy sauce, rice vinegar, and sriracha. 

  3. Cook tofu in boiling, well salted water for 10 minutes.  Remove from water and pat dry. 

  4. Put tofu into the sauce bowl, submerging each piece.  

  5. Bring pan to medium heat, add oil, and add tofu (saving excess sauce)- cook evenly on each side- 3-4 minutes each.  

  6. Add corn starch to excess sauce.  Once tofu has been cooked on each side pour sauce over tofu and cook 1-2 more minutes. 

  7. Serve in a bowl with rice, tofu, and any desired combination of edamame, cucumber, carrots, serrano, onion, & radish.  Squeeze lime on top and add toppings of choice.
