Baked Sweet Potato Mash with Corn, Beans, & Veggies

4 servings 

Ingredients:

  • 2 large sweet potatoes

  • 1 (15oz) can black beans, no salt added

  • 1 (15oz) can corn, no salt added

  • 2 cups purple cabbage, thinly sliced 

  • 2 cups arugula, chopped 

  • 1 cup cheddar cheese, grated 

  • ½ cup salsa of choice 

Instructions: 

  1. Preheat oven to 400 degrees and bake potatoes for 30 minutes 

  2. Add beans and corn to small sauce pan and bring to simmer 

  3. Once potatoes are cooked, remove the peel and mash contents with a fork on a serving plate or platter.  Add beans, corn, cheese, vegetables, and top with salsa.
